My step-mom sent me this muffin recipe and I immediately whipped some up for us to try. Her friend sent her this recipe and I have no idea the origin of it [so clearly not taking credit for this]. All I know is that these are delicious! We have already made two batches because W loves them [he literally almost jumps out of his high chair for them] as well as Casey [and me of course]! So, go ahead, try them!
1/2 cup sweet mashed potatoes
1/2 cup shredded coconut
1/2 chopped walnuts*
1/4 cup honey
1/8 shredded carrot
3/4 cup almond flour
1 tsp cinnamon
1 tsp almond extract
1 tsp baking powder
1-2 tbsp of flax seed **
1. Preheat the oven to 350 degrees.
2. Combine all ingredients in a medium size mixing bowl and stir.
3. Scoop them into muffin tins [either spray tins with Coconut Oil Spray or use cupcake liners]. This batter makes about 9 muffins.
4. Bake for 22-26 minutes or until golden brown on top.
*you can leave this out if you are planning on giving this to a baby under the age of 1
** I have been adding flax seed to mine for extra omegas but it is not necessary
