Several people have been asking what I have been eating to get back into shape after the little guy was born. Que the eye rolling now, because honestly I haven't really been doing much of anything. During my pregnancy I had already changed some of my eating habits and adapted a much healthier palette. I read Rob Wolfe's The Paleo Solution and it just clicked with me. It made perfect sense but do I eat paleo strictly 100% of the time; hell to the no. My breakfast and lunch are almost always strictly paleo but dinner is a toss up. I think two of the main reasons the baby weight fell off quickly are 1-breastfeeding around the clock and 2- W needed to be bounced ALL. DAY. LONG. So I bounced and bounced for about 3 months straight and still find myself bouncing when I am alone standing in line or brushing my teeth.
So, with all of that said, here is my go to breakfast. I pretty much eat this every single day and on the days when I do not feel like "cooking" I will eat a Larabar and an apple or pear.
Above are all the simple ingredients that I like to use in my scramble and I pretty much buy everything organic. First, toss in some butter and let it melt a bit and then throw in some organic mushrooms and tear up some washed spinach and let that simmer a bit.
I always enjoy fruit in the morning so you can find me either cutting up an apple or pear.
This is where I would ideally enjoy my breakfast...
But this is where I normally eat. And now that I think about it...I would choose a standing up counter side breakfast with my little man near by, over sitting peacefully at the table anytime. So there you have it. What I eat for breakfast and it truly gives this mama enough energy to make it until lunch.
